Ingredients
- 1 pound smoked kielbasa, sliced into ½-inch rounds
- 4 cups baby potatoes, halved (or substitute with diced russet potatoes)
- 1 medium yellow onion, chopped
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
- ½ cup sour cream
- 1½ cups shredded cheddar cheese
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Salt and pepper, to taste
- 1 tablespoon olive oil (optional, for added richness)
Instructions
- Step 1 – Prep Your Ingredients:
Wash and halve the baby potatoes. Chop the onion. Slice the kielbasa into ½-inch rounds. - Step 2 – Layer the Crockpot:
Add the potatoes and chopped onions to the bottom of your crockpot. Layer the kielbasa slices over the top. - Step 3 – Mix the Sauce:
In a medium bowl, stir together the cream of mushroom soup, sour cream, garlic powder, paprika, and a pinch of salt and pepper. Pour the sauce evenly over the ingredients in the crockpot. - Step 4 – Cook Low and Slow:
Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours, until the potatoes are soft and fork-tender. - Step 5 – Add the Cheese:
Sprinkle shredded cheddar cheese over the top about 15 minutes before serving. Cover and let the cheese melt. Serve hot.
Notes
- You can substitute turkey kielbasa for a leaner option.
- For a spicier kick, add a pinch of crushed red pepper or swap in spicy kielbasa.
- Want it extra creamy? Stir in a little cream cheese during the final 30 minutes.
- Make it a full meal by pairing with crusty bread, green beans, or a fresh side salad.
