Description

A vibrant, chilled summer soup made with fresh watermelon, cucumber, basil, and a hint of lime. This easy recipe is hydrating, light, and perfect for warm weather.


Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 cup ripe tomatoes, chopped
  • ½ cup cucumber, diced
  • ¼ cup red bell pepper, chopped
  • 2 tbsp red onion, finely chopped
  • Juice of 1 lime
  • 2 tbsp fresh basil leaves
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  • Prepare Ingredients: Chop all fruits and vegetables into chunks.
  • Blend Soup: Add everything to a blender and purée until smooth.
  • Season and Chill: Add salt and pepper, adjust flavors, then chill for at least 1 hour.
  • Serve: Garnish with diced veggies and a basil sprig.
