Ingredients
- 12–14 lbs whole turkey
- 1 cup pumpkin puree
- 2 cups cooked wild rice or stuffing
- 4 cups mixed vegetables (fresh or frozen)
- 1 cup heavy cream or oat cream
- 2 tsp cinnamon
- 1 tsp nutmeg
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 tsp dried thyme
- 2 cloves garlic, minced
Instructions
- Rub the turkey with garlic herb butter and roast at 350°F until the internal temperature reaches 165°F.
- Whisk pumpkin puree with cream, cinnamon, nutmeg, salt, and pepper. Pour into a greased dish and bake at 375°F for 35 minutes.
- Heat olive oil in a skillet. Add vegetables, garlic, and thyme. Sauté until tender and vibrant.
- Let the turkey rest for 20 minutes before slicing. Plate with pumpkin bake and vegetables, and serve warm.
Notes
You can substitute mashed sweet potato for pumpkin. For a dairy-free version, use coconut cream instead of heavy cream. Leftovers store well for 3–4 days refrigerated.
