This sweet potato taco bowl is a flavor-packed, wholesome dinner featuring roasted sweet potatoes, seasoned ground beef, black beans, corn, and fresh toppings. Ingredients
Spice Mix:
- 2 tbsp chili powder
- 1 tbsp sweet smoked paprika (or hot for spicier version)
- 1 tbsp ground cumin
- 2 tsp kosher salt (adjust to taste)
- 1 tbsp dried oregano
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4–1/2 tsp cayenne powder (optional)
Main Ingredients:
- 1 lb (454g) sweet potatoes, peeled and cut into 1–2″ cubes
- 1 tbsp vegetable oil
- 1 lb (454g) extra lean ground beef
- 1 (14 oz / 330 ml) can black beans, drained and rinsed
- 1 cup corn (from a can or 2 ears, kernels removed)
- 1 pint cherry tomatoes, halved (or 2 large tomatoes, chopped)
- 1 medium avocado, sliced
Optional Garnishes:
- Sour cream
- Crumbled feta cheese
- Lime wedges
- Jalapeños, sliced
- Fresh cilantro
- Green onions, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together chili powder, paprika, cumin, salt, oregano, garlic powder, onion powder, and cayenne if using.
- In a large bowl, toss the sweet potato cubes with vegetable oil and half the spice mix (about 2 tablespoons).
- Spread the seasoned sweet potatoes on a baking sheet and roast for 15–20 minutes, until tender and caramelized.
- While the sweet potatoes roast, cook the ground beef in a large skillet over medium-high heat for 5–7 minutes until browned.
- Drain excess fat, leaving about 1 tablespoon in the skillet for flavor.
- Add the black beans, corn, and remaining spice mix to the skillet. Stir to coat and cook until heated through, about 5 minutes.
- Assemble bowls by layering roasted sweet potatoes, beef and bean mixture, tomatoes, avocado slices, and optional toppings.
- Serve immediately, or offer ingredients separately for a taco bar-style presentation.
Notes
- You can make this vegetarian by replacing ground beef with tofu crumbles or more beans.
- Store components separately in airtight containers; good for 4 days refrigerated.
