This Pitaya Yellow Dragon Fruit Salad is a tropical delight that combines the vibrant flavors of sweet yellow dragon fruit, juicy mango, and tangy cara cara oranges. Ingredients

  • 2 yellow dragon fruits (pitaya)
  • 1 cara cara orange (or substitute with navel or blood orange)
  • 1 mango, peeled and diced
  • 2 tbsp lime simple syrup (homemade or store-bought)
  • 1 tsp Tajín seasoning (adjust to taste)
  • Fresh mint leaves (optional, for garnish)


Instructions

  1. Prepare the Dragon Fruit:
    Cut the yellow dragon fruits in half lengthwise. Using a spoon, scoop out the flesh and cut it into small cubes.
  2. Segment the Orange:
    Peel the cara cara orange and cut it into segments by cutting along the membranes to remove each segment. Discard any seeds.
  3. Dice the Mango:
    Peel the mango, remove the pit, and cut the fruit into small cubes.
  4. Combine the Ingredients:
    In a large mixing bowl, combine the cubed dragon fruit, orange segments, and diced mango. Toss gently to mix the ingredients evenly.
  5. Add Lime Syrup:
    Drizzle the lime simple syrup over the fruit mixture and toss gently to coat the fruits in the syrup.
