Ingredients
- 1 whole cucumber, sliced (peeled if bitter)
- 1 inch fresh ginger root, peeled and lightly crushed
- Juice of 1 lemon (freshly squeezed)
- 4 cups cold filtered water
- Ice cubes (optional)

Instructions
- Slice a few rounds of cucumber for garnish, then cut the rest into chunks.
- Add the cucumber chunks to a large glass pitcher.
- Gently press the cucumber with the back of a spoon to release its juices.
- Lightly crush the peeled ginger and add it to the pitcher.
- Squeeze in the juice from one lemon, discarding seeds and pulp.
- Pour in 4 cups of cold filtered water.
- Add ice cubes if desired, and stir gently to mix.
- Refrigerate for at least 2 hours, or overnight for stronger flavor.
- Serve chilled, garnished with cucumber slices or mint if desired.
