Description
Crispy bite-sized Hasselback potatoes baked with cheese, bacon, and sour cream. Perfect for game day or family dinners.
Ingredients
- 1 lb small Yukon Gold or red potatoes
- 2 tbsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 4 oz Colby Jack or cheddar cheese, cut into squares
- 3 strips cooked bacon, chopped
- 1/2 cup sour cream
- 2 green onions, sliced
Instructions
- Heat oven to 400°F and line a baking sheet.
- Slice potatoes thinly without cutting through. Brush with oil, season with salt and pepper.
- Bake 30 minutes until tender. Add cheese in cuts and bake 5–7 minutes more.
- Top with sour cream, bacon, and scallions. Serve warm.
Notes
- Swap bacon for mushrooms for vegetarian. Try Greek yogurt instead of sour cream. Add spices like paprika for extra flavor.
