Description

Crispy bite-sized Hasselback potatoes baked with cheese, bacon, and sour cream. Perfect for game day or family dinners.


Ingredients

  • 1 lb small Yukon Gold or red potatoes
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 4 oz Colby Jack or cheddar cheese, cut into squares
  • 3 strips cooked bacon, chopped
  • 1/2 cup sour cream
  • 2 green onions, sliced


Instructions

  1. Heat oven to 400°F and line a baking sheet.
  2. Slice potatoes thinly without cutting through. Brush with oil, season with salt and pepper.
  3. Bake 30 minutes until tender. Add cheese in cuts and bake 5–7 minutes more.
  4. Top with sour cream, bacon, and scallions. Serve warm.

Notes

  • Swap bacon for mushrooms for vegetarian. Try Greek yogurt instead of sour cream. Add spices like paprika for extra flavor.
