This grilled steak nachos recipe delivers sizzling flavor straight from the fire.   • 1 large bag of sturdy tortilla chips

Cheese Blend

  • 2 cups sharp cheddar cheese, shredded

  • 1 cup Monterey Jack cheese, shredded

Steak

  • 1 lb ribeye or flank steak

  • 1 tbsp olive oil

  • 1 tsp kosher salt

  • ½ tsp freshly ground black pepper

Toppings

  • ½ cup diced red onion

  • 1 jalapeño, thinly sliced

  • ½ cup cherry or grape tomatoes, chopped

  • 1 ripe avocado, diced

  • ¼ cup chopped fresh cilantro

  • ½ cup guacamole

  • ¼ cup sour cream or crema

  • ½ cup fresh salsa

  • Lime wedges, for serving


Instructions

  • Preheat the Grill or Oven
    Preheat a charcoal or gas grill to medium-high heat (about 400°F). For oven baking, preheat to 400°F and place a rack in the upper third.

  • Season and Grill the Steak
    Pat the steak dry. Rub with olive oil, then season both sides with salt and pepper. Grill for 3–4 minutes per side for medium-rare. Remove from heat and rest for 5 minutes. Slice thinly across the grain.

  • Layer the Nachos
    In a large cast-iron skillet or grill-safe pan, layer half the tortilla chips, followed by half the cheese, grilled steak slices, and toppings (onion, tomatoes, jalapeños). Repeat with a second layer.

  • Melt the Cheese
    Place the skillet back on the grill (or in the oven) and cook for 8–10 minutes, or until the cheese is fully melted and slightly golden on the edges.

  • Add Fresh Garnishes
    Remove from heat and immediately top with diced avocado, fresh cilantro, a scoop of guacamole, and a drizzle of sour cream. Serve with lime wedges and salsa on the side.
