Ingredients
- 2 cups chopped rhubarb
- 1/2 cup sugar or honey
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1/2 cup oats (optional)
- 1 tbsp butter (optional)
- Pinch of cinnamon
- Yogurt or oatmeal for serving
Instructions
- Combine rhubarb, sugar, lemon juice, and vanilla in a saucepan.
- Simmer 10–12 minutes until soft.
- Stir in butter and cinnamon if using.
- Serve over oats or yogurt.
