Ingredients
- 1 ripe pineapple, peeled and chopped (save juice)
- 1-inch piece fresh ginger root, thinly sliced
- 2 stalks lemongrass, lightly crushed
- 3–4 tablespoons Costa Rican honey (or high-quality raw honey)
- 6 cups water
- Ice cubes (optional, for serving cold)
- Optional garnish: fresh mint sprigs, pineapple slices
Instructions
- Peel and chop the pineapple into chunks, saving any juice.
- In a large pot, combine the pineapple, ginger, lemongrass, and water.
- Bring to a gentle simmer and cook uncovered for 10–15 minutes.
- Remove from heat and stir in the honey until fully dissolved.
- Strain the tea using a fine mesh strainer or cheesecloth.
- Let it cool slightly before serving.
- For a cold version, refrigerate for at least 1 hour.
- Serve over ice with mint or pineapple slices, or enjoy warm.

- For a citrusy twist, add the juice of half a lime after steeping.
