These Cookie Monster cupcakes are the ultimate Halloween desserts. Fluffy chocolate cupcakes are topped with vibrant blue frosting, candy eyes, and cookies for a playful, nostalgic treat. They’re easy to make, fun to decorate, and guaranteed to bring smiles at parties or family gatherings.
Ingredients
For the Blue Frosting:
- ½ cup unsalted butter, room temperature
- ½ cup vegetable shortening
- 3 cups powdered sugar, sifted
- 2 tbsp milk (plus more if needed for consistency)
- 1 tsp vanilla extract
- 1 drop electric blue gel food color
- 2 drops royal blue gel food color
For the Cupcakes:
- 18 chocolate cupcakes (store-bought or homemade)
- 18 pairs candy eyes
- 9 chocolate chip cookies, halved
Instructions
- Make the Frosting: In a large mixing bowl, beat butter and shortening until smooth and creamy. Add vanilla and 1 cup of powdered sugar. Mix on low, then increase to medium until combined.
- Finish Frosting: Add remaining powdered sugar, milk, and food coloring. Beat on medium-high for 3-5 minutes until fluffy. Add more milk if needed to achieve a piping consistency.
- Pipe the Fur: Fit a piping bag with tip #233 (grass tip) or tip #16 (star tip). Pipe messy strokes or star clusters over each cupcake to create Cookie Monster’s fur.
- Decorate: Place two candy eyes on each cupcake and press half a chocolate chip cookie into the frosting for the mouth.
Notes
- For tall cupcake domes, bake batter at 400°F for 5 minutes, then reduce to 350°F for the rest of the bake.
- If buttercream clogs the piping tip, clean it with a paper towel before continuing.
- To save time, coat frosted cupcakes in blue-dyed shredded coconut instead of piping.
- Substitutions: Use all butter for a richer frosting, or swap chocolate cupcakes with vanilla + mini chocolate chips.
