  • ½ tsp Italian seasoning

Instructions

1. Prepare the Meatballs

  1. In a bowl, mix the ground chicken, breadcrumbs, egg, Parmesan, parsley, garlic powder, onion powder, salt, and black pepper.
  2. Gently combine until just mixed—avoid overworking the meat.
  3. Roll into small, bite-sized meatballs (about ¾ inch in diameter) and set aside.

2. Sauté the Vegetables

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onions, carrots, and celery, cooking until softened and fragrant (about 5 minutes).
  3. Stir in salt, pepper, and Italian seasoning.

3. Simmer the Soup

  1. Pour in the chicken broth and bring to a gentle simmer.
  2. Carefully add the prepared meatballs to the broth, stirring gently to prevent breaking.
