Instructions

Rognons à la Moutarde:

  1. Melt butter in a sauté pan over medium heat. Sear kidneys on both sides until golden brown.
  2. Remove kidneys and set aside. Deglaze the pan with white wine, scraping the browned bits.
  3. Stir in Dijon mustard and cream. Simmer until the sauce is smooth and slightly thickened.
  4. Return kidneys to the pan and cook for an additional 2-3 minutes. Season with salt and pepper.
  5. Garnish with parsley and serve with crusty French bread or mashed potatoes.

Rognons with Madeira Sauce:

  • Heat butter and olive oil in a heavy-bottomed pan. Sauté shallots until translucent.
  • Add kidneys and cook until browned on all sides.
  • Deglaze the pan with Madeira wine and reduce by half.
  • Stir in heavy cream and simmer for a rich, creamy texture.
  • Season with salt and pepper. Serve with roasted vegetables or steamed green beans.
