Instructions
Rognons à la Moutarde:

- Stir in Dijon mustard and cream. Simmer until the sauce is smooth and slightly thickened.

Rognons with Madeira Sauce:
- Heat butter and olive oil in a heavy-bottomed pan. Sauté shallots until translucent.
